INGREDIENTS:
- 2-3 units of kokum
- ½ cup coconut milk/ 1 cup grated fresh coconut.
- ½ cup water or as required
- 2 pieces garlic
- ½ inch ginger
- 2 green chilies
- Coriander leaves
- Salt
HOW TO MAKE:
Soak the kokum in 1 small cup of warm water for about 30 minutes.
IF USING COCONUT MILK: In a blender add the coconut milk, water, ginger, garlic and green chillies and blend until smooth.
IF USING GRATED COCONUT: In a blender add the grated coconut, ginger, garlic and green chillies along with a little water, and make a thick paste out of these solkadhi ingredients.
Add water again to this solkadhi mixture and churn.
With the use of a strainer, separate the milk from the paste. Extract as much as possible.
Remove the kokum from the water, and then add the same water to the coconut milk that you have extracted.
Mix well till you get a creamy pink-coloured solkadhi drink.
Add salt to the solkadhi and check the seasoning. Garnish with coriander leaves and serve cold.
