INGREDIENTS:
- 40g Red Rice/ Black Rice
- Water for cooking Rice
- 1 tsp Soy sauce (By Urban Platter)
- 1 tsp Coconut Oil/ Ghee
- 1 tsp Sesame Seeds
- 1 tsp Black Pepper powder
- 50g Tofu/ Paneer
- 20 g Cooked/ Boiled White Chickpea/ Rajma/ Cowpea/ Black Chickpea
- 1 Avocado
- 1 cup chopped (Beans + Carrot + Red Cabbage + Broccoli)
- Salt as required
HOW TO MAKE:
Wash rice to remove possible impurities that cannot be ruled out in a natural product.
In a pan add rice, water and salt to taste. Set the stove to the highest heat setting and bring the rice to a boil.
Once the water boils, set the stove to medium heat and let the rice simmer with the lid closed for about 40 minutes until the water has been completely absorbed.
Dice the tofu. Heat the coconut oil/ ghee in a pan and fry the tofu until golden brown on all sides and add little sesame seeds to it.
Deglaze with the soy sauce and simmer over medium heat.
Pit and hollow out the avocado and sprinkle with sesame seeds.
In a large bowl, serve the rice with tofu, chickpea/ rajma/ black chickpea, avocado and all other veggies.
Sprinkle black pepper if desired and enjoy!
