INGREDIENTS:
- 1 cup red rice or brown rice
- 2 cups water (for soaking)
- 2 cups water (for cooking)
- 1 tsp coconut oil/ ghee
- 1 amla (Indian gooseberry), chopped (optional)
- Salt to taste
HOW TO MAKE:
Rinse the red rice or brown rice thoroughly under cold water.
In a bowl, soak the rice in 2 cups of water for 10-12 hours or overnight.
This helps reduce cooking time and improves the rice's texture.
After soaking, drain the water from the soaked rice.
Rinse the rice once again under cold water to remove any residual starch.
Add the soaked and drained rice to the cooker with coconut oil/ ghee. Add the one whole amla to the rice.
Pour 2 cups of fresh water into the cooker. Add salt to taste.
Close the cooker lid and cook the rice on medium heat. Let it cook for about 15-20 minutes, or until the rice is tender. Cooking time may vary based on the type and brand of rice.
Once cooked, fluff the rice with a fork to separate the grains. The amla will add a subtle tangy flavor to the rice.
Serve the cooked red rice or brown rice hot as a side dish or as a base for your favorite curry or stir-fry. Also you can have the cooked amla.
