INGREDIENTS:
- Paneer/ Tofu 70 gm (Crumbled/ Grated)
- 1 small Capsicum
- 1 small Onion
- 1 small Tomato
- 1 small Carrot
- 1 tbsp Coriander
- Salt as required
- oil/ ghee 2 tsp
- Ginger to taste
- 1 Green chilli
- Turmeric powder ½ Tsp
- Chilli powder 1 tsp
- Lemon as required
- Dhaniya Powder 1 tsp (Optional)
How to Make Paneer Bhurji:
- Start by crumbing/ grating the paneer /tofu with your hands and then set it aside. Also crush the ginger, and chilies using a mortar and pestle and set aside.
- Put a pan on medium heat and add the oil/ ghee to it. Add the chopped onion, along with crushed green chilies, ginger and garlic. Stir and cook for 5 minutes until it turns light golden brown in color.
- Add the chopped tomatoes and Capsicum and cook for 3 minutes until softened.
- Now, add all the spices- coriander powder, turmeric and red chili powder. Also add the salt, mix and cook the spices for 30 seconds.
- Add the crumbled paneer/ tofu and mix until the paneer/ tofu is mixed well with the rest of the masala. Cook for 2 to 3 minutes only. Do not overcook else it will become rubbery and chewy.
- Add in freshly chopped cilantro and squeeze in some fresh lemon juice and your paneer/ tofu bhurji is ready.
