INGREDIENTS:
- 1 carrot chopped
- 1 tbsp cup beans chopped
- ¼ cup cauliflower chopped
- 1 small tomato chopped
- 1 small onion sliced
- 1 tbsp parsley chopped
- 1 tbsp cup of fresh coconut
- ½ cup of coriander stems
- 2 dried red chilies
- 1 tsp of sesame seeds
- 1 tsp of oil / ghee
HOW YO MAKE:
Pressure cook carrot, beans, cauliflower until it turns soft.
Meanwhile, in a pan heat a oil/ ghee and stir fry onion, tomato until it turns golden brown in color.
Now make a fine paste of onion, tomato, fresh coconut, coriander stems, red chilies.
Now again in a pan add in oil/ ghee and add in the paste, and pressure cooked veggies.
Serve the Mix vegetable curry with freshly chopped parsley and sesame seeds.
