INGREDIENTS:
- 1 cup Red Rice/ Black Rice/ Quinoa (Cooked)
- 100 g Grilled Chicken Breast.
- 1 tsp salt
- ½ red pepper (Diced)
- 2-3 green onions (Diced)
- 1 red chili minced
- 1 tsp Ghee/ Olive Oil to taste - enough to moisten the quinoa salad
- 1 tsp Black Pepper
Toppings
- 1 Carrot (Shredded)
- 1 Cucumber (Julienned)
- 3-4 cherry tomatoes
- 1 tbsp cilantro
- 1 tsp Sesame seeds (Roasted)
HOW TO MAKE:
Cool the Red Rice/ Black Rice or Quinoa and toss with the red pepper, green onion and red chili. Add Ghee/ Olive Oil to moisten and little Black Pepper.
Spoon Red Rice/ Black Rice/ Quinoa salad into the bowl.
Top with Grilled Chicken. Add all the topping ingredients to the bowl and sprinkle the roasted Sesame seeds over the bowl and Enjoy!
